Ingredients

  • – 1 1/2 pounds (680 g) lean ground beef
  • – 1 medium white onion, peeled and diced
  • – 1 large garlic clove, minced
  • – 6 cups (1.4 L) of chicken broth
  • – 6 cups (1.4 L) of peeled & diced Russet potatoes
  • – 2 cups (480 ml) of your favourite frozen vegetable mix
  • – 3 teaspoons (15 ml) dried basil
  • – 2 teaspoons (10 ml) dried parsley flakes
  • – 1 1/2 cups (360 ml) milk
  • – 2 tablespoons (30 ml) cornstarch
  • – 8 ounces (227 g) cheddar cheese, cubed


Instructions

  1. In a large pan, cook the ground beef and onions until the onions are tender and the beef is browned. Remove any excess fat.
  2. Sauté the garlic until it turns fragrant and golden. Transfer the beef mixture to a slow cooker or a pot on the stove.
  3. Incorporate the potatoes, broth, mixed vegetables, basil, and parsley into the pot.
  4. Let it cook in the slow cooker on a low setting for 6-8 hours, on high for 3-4 hours, or simmer on the stove until the potatoes are soft and begin to break down slightly.
  5. Mix the cornstarch with the milk, then blend it into the soup. Add the cheddar cheese and allow it to melt, stirring occasionally. Once fully melted, ladle the soup into bowls and serve.
