Description

A creamy and hearty Crockpot Cheeseburger Soup that combines ground beef, potatoes, and cheddar cheese for a delightful, comforting meal.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 3 cups potatoes, diced
  • 1 cup frozen corn
  • 1 teaspoon Italian seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • Salt and pepper to taste
  • Optional: bacon bits and green onions for garnish


Instructions

  1. In a skillet, brown the ground beef with the chopped onion and minced garlic. Drain excess fat.
  2. Transfer the beef mixture to the crockpot.
  3. Add the beef broth, diced potatoes, corn, and Italian seasoning to the crockpot.
  4. Cook on low for 360-420 minutes or high for 180-240 minutes until the potatoes are tender.
  5. Stir in the milk and shredded cheddar cheese until melted.
  6. Season with salt and pepper to taste.
