Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 3 cups potatoes, diced
- 1 cup frozen corn
- 1 teaspoon Italian seasoning
- 2 cups shredded cheddar cheese
- 1 cup milk
- Salt and pepper to taste
- Optional: bacon bits and green onions for garnish
Instructions
- In a skillet, brown the ground beef with the chopped onion and minced garlic. Drain excess fat.
- Transfer the beef mixture to the crockpot.
- Add the beef broth, diced potatoes, corn, and Italian seasoning to the crockpot.
- Cook on low for 360-420 minutes or high for 180-240 minutes until the potatoes are tender.
- Stir in the milk and shredded cheddar cheese until melted.
- Season with salt and pepper to taste.
- Serve hot, garnished with bacon bits and green onions if desired.
