Description

A warm, comforting Crockpot Butter Chicken that brings family gatherings to life with tender chicken thighs in a rich buttery sauce.


Ingredients

  • 2 lbs boneless chicken thighs
  • 1 cup unsalted butter
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. In a crockpot, place the chicken thighs and season with salt and pepper.
  2. In a skillet, melt the butter and sauté the onion until translucent. Add garlic and ginger, cooking for an additional minute.
  3. Stir in the spices (garam masala, turmeric, cumin, chili powder) and cook for 30 seconds.
  4. Add the crushed tomatoes to the skillet, stirring to combine. Pour the mixture over the chicken in the crockpot.
  5. Cook on low for 360 minutes or until the chicken is tender.
  6. Before serving, stir in the heavy cream and cook for an additional 30 minutes.
  7. Serve over rice or with naan, garnished with fresh cilantro.

Notes

Consider browning the chicken thighs before adding them to the crockpot for added flavor depth.
