A warm, comforting Crockpot Butter Chicken that brings family gatherings to life with tender chicken thighs in a rich buttery sauce.
Ingredients
- 2 lbs boneless chicken thighs
- 1 cup unsalted butter
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 teaspoons garam masala
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 can (14 oz) crushed tomatoes
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a crockpot, place the chicken thighs and season with salt and pepper.
- In a skillet, melt the butter and sauté the onion until translucent. Add garlic and ginger, cooking for an additional minute.
- Stir in the spices (garam masala, turmeric, cumin, chili powder) and cook for 30 seconds.
- Add the crushed tomatoes to the skillet, stirring to combine. Pour the mixture over the chicken in the crockpot.
- Cook on low for 360 minutes or until the chicken is tender.
- Before serving, stir in the heavy cream and cook for an additional 30 minutes.
- Serve over rice or with naan, garnished with fresh cilantro.

Consider browning the chicken thighs before adding them to the crockpot for added flavor depth.
