Ingredients
- – 2 slices beef loins or beef chops – pounded to 3/4 inch thick; 140g each (5 oz each)
- – 1 cup Japanese panko bread crumbs – See Note 1 (240 ml)
- – ½ cup all-purpose flour (60g)
- – 1 egg – beaten
- – salt & pepper
- – vegetable oil for frying
- – 4 tablespoons tomato ketchup (60 ml)
- – 2 ½ tablespoons Worcestershire sauce (37.5 ml)
- – 1 tablespoon soy sauce (15 ml)
- – 1/8 teaspoon (1 ml) garlic and onion powder
- – 1 ½ teaspoons sugar – (optional) (7.5 g)
Instructions
- Create the sauce: In a small bowl, mix together the tomato ketchup, Worcestershire sauce, soy sauce, and garlic & onion powder. If you prefer a sweeter taste, gradually incorporate sugar until it meets your preference. Set aside for later use.
- Prepare the beef loins: Make small cuts in the connective tissue around the edge of each beef loin to prevent curling during cooking. Flatten them to a thickness of about ¾ inch.
- Coat the beef: Place the egg, flour, and panko bread crumbs in separate containers. To make the coating adhere better, mix a small amount of flour with the egg. Season the beef with salt and pepper, then cover it with flour and remove any surplus. Next, dip it into the beaten egg mixture, followed by pressing it firmly into the panko bread crumbs for a thick coating.
- Heat the oil: Fill a large, sturdy pot or fryer with enough vegetable oil for deep frying. Warm the oil to 340°F over medium heat to ensure even cooking without burning the crust. If a thermometer is unavailable, test by dropping a few bread crumbs into the oil; it’s ready when they start sizzling.
- Cook the beef cutlets: Carefully lower a beef cutlet into the hot oil and fry each side for 5 to 6 minutes until the meat is cooked through and the crust is golden and crispy. Use a skimmer to remove floating breadcrumbs and maintain the oil temperature at 340°F. Repeat the process with the remaining cutlets, cooking in batches to keep the oil hot.
- Present the dish: Cut the crispy tonkatsu into slices and serve it with the prepared sauce, along with shredded cabbage and rice. Enjoy your meal!

- Consider using lean beef cuts and shallow frying with less oil instead of deep frying for a healthier option.
