These crispy sweet potato and red lentil patties are not only nutritious but also deliver a comforting flavor with a delightful avocado cilantro sauce.
Ingredients
- 2 medium sweet potatoes, cooked and mashed
- 1 cup red lentils, cooked
- 1/2 cup breadcrumbs
- 1/4 cup chopped cilantro
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt to taste
- Pepper to taste
- Oil for frying
- 1 ripe avocado
- 1 tablespoon lime juice
- 1/4 cup plain yogurt or sour cream
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mashed sweet potatoes, cooked red lentils, breadcrumbs, cilantro, cumin, paprika, salt, and pepper. Mix until well combined.
- Form the mixture into small patties.
- Heat oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- For the avocado sauce, blend the avocado, lime juice, yogurt, salt, and pepper until smooth.
- Serve the patties warm with the creamy avocado cilantro sauce.
