Description

These crispy sweet potato and red lentil patties are not only nutritious but also deliver a comforting flavor with a delightful avocado cilantro sauce.


Ingredients

  • 2 medium sweet potatoes, cooked and mashed
  • 1 cup red lentils, cooked
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Oil for frying
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • 1/4 cup plain yogurt or sour cream
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the mashed sweet potatoes, cooked red lentils, breadcrumbs, cilantro, cumin, paprika, salt, and pepper. Mix until well combined.
  2. Form the mixture into small patties.
  3. Heat oil in a skillet over medium heat and cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  4. For the avocado sauce, blend the avocado, lime juice, yogurt, salt, and pepper until smooth.
  5. Serve the patties warm with the creamy avocado cilantro sauce.

Notes

Experiment with thickness and spices for varied textures and flavors. For extra flavor, add grated carrots or green onions.
