Ingredients

- 1 teaspoon salt
- 1 tablespoon soy sauce

Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine the rice, water, and salt; bring to a boil.
- Reduce heat, cover, and simmer for about 18 minutes until water is absorbed.
- Remove from heat and let it cool.
- Once cool, mix in soy sauce.
- Shape the rice into small, compact squares or rounds.
- Heat oil in a frying pan over medium heat.
- Fry the rice cakes until golden brown and crispy on both sides.
- Drain on paper towels and serve with your favorite sushi toppings.
