Ingredients

  • 1 1/4 lbs. (567 g) boneless skinless chicken breasts, cut into 1 1/4-inch (3 cm) pieces
  • 2 Tbsp (30 ml) all-purpose flour
  • 1 1/2 tsp (7.5 ml) Italian seasoning
  • Salt and freshly ground black pepper
  • 1 Tbsp (15 ml) olive oil
  • 3 Tbsp (45 g) unsalted butter, divided
  • 1 1/2 Tbsp (23 ml) minced fresh garlic (4 cloves)
  • 2 Tbsp (30 ml) finely chopped fresh parsley


Instructions

  1. Heat a 12-inch non-stick pan over medium-high heat.
  2. Pat the chicken pieces dry using paper towels.
  3. Dust the chicken with flour, Italian seasoning, salt, and pepper, and mix thoroughly until the chicken is evenly coated without any flour remaining on the board.
  4. Pour 1 tablespoon of olive oil and 1 tablespoon of butter into the pan, letting the butter melt swiftly. Swirl the pan to spread the mixture evenly.
  5. Place the chicken pieces in a single layer, ensuring there is space between them to allow browning instead of steaming.
  6. Cook until the bottom is a nice golden brown, approximately 3 minutes, then turn them over to the other side and cook for another 2 minutes or until almost fully cooked.
  7. Add the remaining 2 tablespoons of butter in small bits, along with the minced garlic and chopped parsley. Continue to cook for an additional minute (the chicken should reach 165°F in the center and should no longer be pink).
  8. Serve immediately.

Notes

  • Pat the chicken dry before coating with flour and seasoning to ensure a crispy outer layer.
  • Leave space between chicken pieces in the pan for even browning and to prevent steaming.
  • Add minced garlic and chopped parsley towards the end of cooking for a burst of flavor without burning.
