Ingredients
- 1 1/4 lbs. (567 g) boneless skinless chicken breasts, cut into 1 1/4-inch (3 cm) pieces
- 2 Tbsp (30 ml) all-purpose flour
- 1 1/2 tsp (7.5 ml) Italian seasoning
- Salt and freshly ground black pepper
- 1 Tbsp (15 ml) olive oil
- 3 Tbsp (45 g) unsalted butter, divided
- 1 1/2 Tbsp (23 ml) minced fresh garlic (4 cloves)
- 2 Tbsp (30 ml) finely chopped fresh parsley
Instructions
- Heat a 12-inch non-stick pan over medium-high heat.
- Pat the chicken pieces dry using paper towels.
- Dust the chicken with flour, Italian seasoning, salt, and pepper, and mix thoroughly until the chicken is evenly coated without any flour remaining on the board.
- Pour 1 tablespoon of olive oil and 1 tablespoon of butter into the pan, letting the butter melt swiftly. Swirl the pan to spread the mixture evenly.
- Place the chicken pieces in a single layer, ensuring there is space between them to allow browning instead of steaming.
- Cook until the bottom is a nice golden brown, approximately 3 minutes, then turn them over to the other side and cook for another 2 minutes or until almost fully cooked.
- Add the remaining 2 tablespoons of butter in small bits, along with the minced garlic and chopped parsley. Continue to cook for an additional minute (the chicken should reach 165°F in the center and should no longer be pink).
- Serve immediately.
