Description

Delicious crispy rolls filled with shredded chicken and cheese, perfect for gatherings or a late-night snack.


Ingredients

  • 2 cups shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 small corn tortillas
  • Oil for frying
  • Salt to taste


Instructions

  1. In a bowl, mix the shredded chicken, cheese, salsa, cumin, chili powder, and salt until well combined.
  2. Heat a small amount of oil in a skillet over medium heat.
  3. Warm the corn tortillas in a dry pan or microwave until pliable.
  4. Place a few tablespoons of the chicken mixture onto each tortilla and roll them up tightly.
  5. Secure with a toothpick if necessary.
  6. Fry the taquitos in the skillet until golden brown and crispy on all sides, about 3-4 minutes.
  7. Drain on paper towels and serve warm with additional salsa or sour cream on the side.

Notes

Try adjusting the filling according to your taste preferences. For a healthier option, bake the taquitos at 400°F for about 20 minutes instead of frying.
