Ingredients
- 2 cups shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- ½ cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 small corn tortillas
- Oil for frying
- Salt to taste
Instructions
- In a bowl, mix the shredded chicken, cheese, salsa, cumin, chili powder, and salt until well combined.
- Heat a small amount of oil in a skillet over medium heat.
- Warm the corn tortillas in a dry pan or microwave until pliable.
- Place a few tablespoons of the chicken mixture onto each tortilla and roll them up tightly.
- Secure with a toothpick if necessary.
- Fry the taquitos in the skillet until golden brown and crispy on all sides, about 3-4 minutes.
- Drain on paper towels and serve warm with additional salsa or sour cream on the side.
Notes
Try adjusting the filling according to your taste preferences. For a healthier option, bake the taquitos at 400°F for about 20 minutes instead of frying.
