Ingredients
- – 5 tablespoons (75 ml) unsalted butter, divided
- – 1 tablespoon (15 ml) olive oil
- – 3 cups (720 g) mirepoix or use 1 cup (240 g) diced carrots, 1 cup (240 g) diced celery, and 1 cup (240 g) diced yellow onion
- – 2 teaspoons (10 ml) minced garlic
- – 1-1/2 pounds (680 g) baby potatoes gold or red, diced (4 cups)
- – 1-1/2 teaspoons (7.5 ml) Italian seasoning
- – 3/4 teaspoon (4 ml) salt
- – 3/4 teaspoon (4 ml) pepper
- – 3 cups (720 ml) chicken stock or broth, see note 1
- – 2 cups (300 g) frozen broccoli florets thawed and finely chopped
- – 1 cup (150 g) frozen corn
- – 6 tablespoons (45 g) flour
- – 3 cups (720 ml) whole milk
- – 1/2 cup (120 ml) heavy cream
- – 2 cups (200 g) shredded sharp Cheddar cheese
- – Hearty buttered bread optional, for serving
- – Fresh herbs optional, for serving (parsley or thyme)
Instructions
- In a large pot, combine 1 tablespoon of butter with olive oil over medium heat. Toss in the diced carrots, celery, and onion. Cook for 5–7 minutes. Add minced garlic and sauté for an additional 30 seconds.
- Incorporate diced potatoes, Italian seasoning, salt, pepper, and chicken stock. Allow the mixture to reach a boil over medium-high heat, then lower to medium. Cover and let it simmer for 10–15 minutes, or until the vegetables are tender yet firm. Mix in the thawed broccoli and frozen corn. Let it cook for another 2–3 minutes, until everything is tender and warmed through.
- In the meantime, in a medium saucepan, melt the remaining 4 tablespoons of butter over medium heat. Add the flour, stirring constantly for 1 minute. Gradually whisk in the milk until smooth. Continue to cook, stirring constantly, until it thickens and starts to gently boil. Add the heavy cream, then remove from the heat.
- Transfer the milk mixture into the soup, stirring thoroughly. Reduce the heat, then add the Cheddar cheese gradually, stirring until it melts completely. Taste and adjust seasonings if necessary.
- Serve hot, garnished with fresh parsley or thyme, alongside pieces of toasted and buttered bread. Enjoy!
