A comforting and nourishing Creamy Vegetable Soup made with mixed seasonal vegetables, perfect for all ages.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 4 cups mixed vegetables (like broccoli, cauliflower, zucchini, or spinach)
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Heat olive oil over medium heat in a large pot.
- Add chopped onion, diced carrots, and celery to the pot. Sauté until softened, about 5-7 minutes.
- Incorporate minced garlic and cook for another minute until fragrant.
- Pour in vegetable broth and bring to a boil.
- Add mixed vegetables, reduce heat to a simmer, and cook until tender, approximately 10-15 minutes.
- Stir in heavy cream or coconut milk, seasoning with salt and pepper.
- Use an immersion blender to puree the soup until smooth, or leave it chunky as desired.
- Serve hot, garnished with fresh herbs if desired.
