Description

A comforting and nourishing Creamy Vegetable Soup made with mixed seasonal vegetables, perfect for all ages.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 cups mixed vegetables (like broccoli, cauliflower, zucchini, or spinach)
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Add chopped onion, diced carrots, and celery to the pot. Sauté until softened, about 5-7 minutes.
  3. Incorporate minced garlic and cook for another minute until fragrant.
  4. Pour in vegetable broth and bring to a boil.
  5. Add mixed vegetables, reduce heat to a simmer, and cook until tender, approximately 10-15 minutes.
