Ingredients

- Vegetable broth
- Cream or any cream alternative
- Olive oil or butter

Instructions
- In a large pot, heat olive oil or butter over medium heat. Sauté chopped onions, carrots, and celery until tender and fragrant.
- Stir in your choice of other vegetables and sauté for a few minutes.
- Add vegetable broth to the pot, ensuring all vegetables are submerged. Bring to a boil.
- Reduce heat to a simmer, cover the pot, and let it cook for 15-20 minutes.
- Blend the soup until desired smoothness using an immersion blender or transferring to a blender.
