Description

Ingredients

  • Assorted fresh vegetables (carrots, celery, onions, broccoli, etc.)
  • Vegetable broth
  • Cream or any cream alternative
  • Olive oil or butter
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley)


Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Sauté chopped onions, carrots, and celery until tender and fragrant.
  2. Stir in your choice of other vegetables and sauté for a few minutes.
  3. Add vegetable broth to the pot, ensuring all vegetables are submerged. Bring to a boil.
  4. Reduce heat to a simmer, cover the pot, and let it cook for 15-20 minutes.
  5. Blend the soup until desired smoothness using an immersion blender or transferring to a blender.
  6. Return the blended soup to the pot, stir in cream, and season to taste with salt, pepper, and fresh herbs.
