A comforting bowl of creamy vegetable soup that warms the soul and is easy to make with simple, wholesome ingredients.
Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery ribs
- 2 garlic cloves, quartered
- Salt, to taste
- Pepper, to taste
- 5 cups cauliflower (small head)
- 3 potatoes, peeled and quartered
- 4 cups chicken broth
- 2 cups water
- Chives and bacon bits for presentation (optional)
Instructions
- In a large pot, heat the olive oil over medium-high heat.
- Add the diced onion and sauté until translucent.
- Add the diced carrots, celery, and quartered garlic; sauté for a few minutes until softened.
- Season with salt and pepper.
- Add cauliflower florets and quartered potatoes; stir to combine.
- Cover the vegetables with chicken broth and water, and bring to a boil.
- Reduce the heat to medium-low, partially cover the pot, and cook for 25 to 30 minutes until the vegetables are tender.
- Using a stick blender, purée the soup until smooth. If using a traditional blender, carefully transfer in batches.
- Return the blended soup to the pot, taste, and adjust seasoning as necessary.
- Serve garnished with chives and bacon bits if desired.
Notes
For a silkier texture, strain the blended soup through a fine mesh sieve. Homemade chicken broth greatly enhances flavor.
