Description

A comforting bowl of creamy vegetable soup that warms the soul and is easy to make with simple, wholesome ingredients.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery ribs
  • 2 garlic cloves, quartered
  • Salt, to taste
  • Pepper, to taste
  • 5 cups cauliflower (small head)
  • 3 potatoes, peeled and quartered
  • 4 cups chicken broth
  • 2 cups water
  • Chives and bacon bits for presentation (optional)

Instructions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the diced onion and sauté until translucent.
  3. Add the diced carrots, celery, and quartered garlic; sauté for a few minutes until softened.
  4. Season with salt and pepper.
  5. Add cauliflower florets and quartered potatoes; stir to combine.
  6. Cover the vegetables with chicken broth and water, and bring to a boil.
  7. Reduce the heat to medium-low, partially cover the pot, and cook for 25 to 30 minutes until the vegetables are tender.
  8. Using a stick blender, purée the soup until smooth. If using a traditional blender, carefully transfer in batches.
  9. Return the blended soup to the pot, taste, and adjust seasoning as necessary.
  10. Serve garnished with chives and bacon bits if desired.

Notes

For a silkier texture, strain the blended soup through a fine mesh sieve. Homemade chicken broth greatly enhances flavor.
