Description

Creamy Tuscan scallops feature a delicate flavor with a rich and creamy sauce, perfect for a special dinner or weeknight meal.


Ingredients

  • 1 lb Scallops
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 cup Heavy cream
  • 1/2 cup Sun-dried tomatoes, chopped
  • 2 cups Fresh spinach
  • 1/2 cup Parmesan cheese, grated
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season scallops with salt and pepper, then sear in the skillet for 2-3 minutes on each side until golden brown.
  3. Remove scallops and set aside.
  4. In the same skillet, sauté minced garlic until fragrant.
  5. Add sun-dried tomatoes and fresh spinach, cooking until spinach wilts.
  6. Pour in heavy cream and bring to a simmer.
  7. Stir in grated Parmesan cheese until melted.
  8. Return scallops to the skillet, coat in the creamy sauce, and serve immediately.
