Description

A delightful blend of flavors and textures, these creamy Tuscan low carb meatballs transport taste buds to Italy without the burden of excess carbs.


Ingredients

  • 1 pound ground beef or turkey
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped


Instructions

  1. In a large bowl, mix ground meat, Parmesan cheese, almond flour, egg, garlic, Italian seasoning, salt, and pepper until well combined.
  2. Shape the mixture into meatballs.
  3. Heat olive oil in a skillet over medium heat. Brown meatballs on all sides, then remove from skillet.
  4. In the same skillet, add heavy cream, spinach, and sun-dried tomatoes. Bring to a simmer.
  5. Return meatballs to the skillet, cover, and cook for about 10 minutes until cooked through.
  6. Serve hot, garnished with extra Parmesan if desired.
