Ingredients
- 1 pound ground beef or turkey
- 1/2 cup grated Parmesan cheese
- 1/4 cup almond flour
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
Instructions
- In a large bowl, mix ground meat, Parmesan cheese, almond flour, egg, garlic, Italian seasoning, salt, and pepper until well combined.
- Shape the mixture into meatballs.
- Heat olive oil in a skillet over medium heat. Brown meatballs on all sides, then remove from skillet.
- In the same skillet, add heavy cream, spinach, and sun-dried tomatoes. Bring to a simmer.
- Return meatballs to the skillet, cover, and cook for about 10 minutes until cooked through.
- Serve hot, garnished with extra Parmesan if desired.
