Ingredients
- 4 (170 g) boneless skinless chicken breasts

- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons (45 ml) vegetable oil
- 4 garlic cloves, minced
- 1/4 cup (60 g) finely chopped yellow onion
- 1/2 cup (75 g) sun-dried tomatoes, thinly sliced
- 2 cups (60 g) baby spinach
- 1 1/2 cups (360 ml) coconut cream, *see note above for dairy-free options
- 1/4 cup (25 g) freshly grated plant-based parmesan
Instructions
- Prepare the chicken by seasoning both sides with a blend of Italian herbs, salt, and pepper.
- In a large pan, warm 2 tablespoons of oil over medium heat and brown the chicken for 3 to 4 minutes per side until it achieves a golden color. Transfer the chicken to a plate and set it aside.
- Using the same pan, introduce an additional tablespoon of oil and the chopped onion. Cook for 2 to 3 minutes until the onion becomes tender.
- Incorporate the garlic and sun-dried tomatoes, cooking for another minute until they release their aroma.
- Add the spinach to the pan and sauté for one more minute until it begins to wilt.
- Pour in the coconut cream and sprinkle with grated plant-based parmesan, stirring to combine and bringing the mixture to a gentle simmer.
- Return the chicken to the pan and allow it to cook for about 5 minutes until it is thoroughly warmed.
