  • 4 (170 g) boneless skinless chicken breasts

  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons (45 ml) vegetable oil
  • 4 garlic cloves, minced
  • 1/4 cup (60 g) finely chopped yellow onion
  • 1/2 cup (75 g) sun-dried tomatoes, thinly sliced
  • 2 cups (60 g) baby spinach
  • 1 1/2 cups (360 ml) coconut cream, *see note above for dairy-free options
  • 1/4 cup (25 g) freshly grated plant-based parmesan


Instructions

  1. Prepare the chicken by seasoning both sides with a blend of Italian herbs, salt, and pepper.
  2. In a large pan, warm 2 tablespoons of oil over medium heat and brown the chicken for 3 to 4 minutes per side until it achieves a golden color. Transfer the chicken to a plate and set it aside.
  3. Using the same pan, introduce an additional tablespoon of oil and the chopped onion. Cook for 2 to 3 minutes until the onion becomes tender.
  4. Incorporate the garlic and sun-dried tomatoes, cooking for another minute until they release their aroma.
  5. Add the spinach to the pan and sauté for one more minute until it begins to wilt.
  6. Pour in the coconut cream and sprinkle with grated plant-based parmesan, stirring to combine and bringing the mixture to a gentle simmer.
  7. Return the chicken to the pan and allow it to cook for about 5 minutes until it is thoroughly warmed.
