Ingredients

  • 2 tablespoons (30 ml) vegetable oil
  • 1 shallot, minced
  • 4 garlic cloves, minced
  • 2 tablespoons (30 ml) tomato paste
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) paprika
  • 480 ml chicken broth
  • 240 ml whole milk, or more as needed
  • 225 g beef penne pasta
  • 240 ml cherry tomatoes, halved
  • 120 ml sun-dried tomatoes in olive oil, julienne-style, drained
  • salt, to taste
  • pepper, to taste
  • 240 ml fresh baby spinach
  • 60 g grated cheddar cheese
  • 2 tablespoons (30 ml) chopped fresh parsley


Instructions

  1. In a large pan, heat the vegetable oil and add the minced shallot and garlic; sauté, stirring often, for 3-4 minutes until they become soft.
  2. Introduce the tomato paste, oregano, and paprika to the pan. Stir and cook for 2 minutes, allowing the tomato paste to deepen in color.
  3. Pour in the chicken broth, whole milk, penne pasta, cherry tomatoes, and sun-dried tomatoes; add salt and pepper to taste.
  4. Bring the mixture to a boil, then lower the heat and let it simmer, stirring from time to time, for 18-20 minutes until the pasta is cooked al dente.
  5. Take the pan off the heat and mix in the baby spinach and grated cheddar cheese until the spinach wilts and the cheese melts into the sauce.
  6. If the sauce is too thick, gradually add more milk until you achieve your preferred consistency.
  7. Top with chopped fresh parsley and serve while hot.
