Ingredients
- 2 tablespoons (30 ml) vegetable oil
- 1 shallot, minced
- 4 garlic cloves, minced
- 2 tablespoons (30 ml) tomato paste
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) paprika
- 480 ml chicken broth
- 240 ml whole milk, or more as needed
- 225 g beef penne pasta
- 240 ml cherry tomatoes, halved
- 120 ml sun-dried tomatoes in olive oil, julienne-style, drained
- salt, to taste
- pepper, to taste
- 240 ml fresh baby spinach
- 60 g grated cheddar cheese
- 2 tablespoons (30 ml) chopped fresh parsley
Instructions
- In a large pan, heat the vegetable oil and add the minced shallot and garlic; sauté, stirring often, for 3-4 minutes until they become soft.
- Introduce the tomato paste, oregano, and paprika to the pan. Stir and cook for 2 minutes, allowing the tomato paste to deepen in color.
- Pour in the chicken broth, whole milk, penne pasta, cherry tomatoes, and sun-dried tomatoes; add salt and pepper to taste.
- Bring the mixture to a boil, then lower the heat and let it simmer, stirring from time to time, for 18-20 minutes until the pasta is cooked al dente.
- Take the pan off the heat and mix in the baby spinach and grated cheddar cheese until the spinach wilts and the cheese melts into the sauce.
- If the sauce is too thick, gradually add more milk until you achieve your preferred consistency.
- Top with chopped fresh parsley and serve while hot.
