A comforting creamy tomato and white bean stew that brings warmth and flavor to any gathering.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (400 g) diced tomatoes
- 1 cup vegetable broth
- 1 can (400 g) white beans, drained and rinsed
- ½ cup crème fraîche or coconut milk
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- A handful of fresh parsley, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the finely chopped onion and garlic, sautéing them until soft and fragrant.
- Incorporate the diced tomatoes, vegetable broth, smoked paprika, and thyme into the pot. Allow to simmer for about 10 minutes.
- Add the drained white beans and cook for another 10 minutes.
- Stir in the crème fraîche or coconut milk and simmer for an additional 5 minutes.
- Season with salt and pepper to taste and garnish with fresh parsley before serving.
Notes
Pairs perfectly with crusty bread or fluffy rice. Adjust thickness by adding more broth if too thick or simmering uncovered if too thin.
