- – 1 tablespoon (15 ml) olive oil
- – 2 cloves garlic, minced
- – 3 tablespoons (45 ml) tomato paste
- – 1 cup heavy/whipping cream (240ml)
- – 1/4 teaspoon (1 ml) Italian seasoning
- – 1 medium tomato, chopped
Instructions
- Slice each chicken breast into two thinner sections by cutting them lengthwise. Season these pieces with garlic powder, salt, and pepper, then lightly coat them with flour.
- In a skillet over medium-high heat, combine the butter and olive oil, allowing the mixture to heat for a few minutes.
- Sauté the chicken for approximately 5 to 6 minutes on each side until they are golden brown and fully cooked through (internal temperature should reach 165°F). Remove the chicken from the pan and set it aside on a plate.
- Lower the heat to medium, then add the minced garlic and tomato paste to the skillet, stirring for about 20 to 30 seconds.
- Gradually whisk in the cream and the Italian seasoning until the mixture is smooth.
- Incorporate the chopped tomato into the sauce, letting it simmer for an additional 3 to 5 minutes.
- Return the chicken to the skillet, drizzling some sauce over the top. Adjust the seasoning with extra salt and pepper if desired, and serve promptly.
