  • – Salt & pepper to taste
  • – 1/2 teaspoon (3 ml) garlic powder
  • – Flour for dredging
  • – 1 tablespoon (15 ml) butter
  • – 1 tablespoon (15 ml) olive oil
  • – 2 cloves garlic, minced
  • – 3 tablespoons (45 ml) tomato paste
  • – 1 cup heavy/whipping cream (240ml)
  • – 1/4 teaspoon (1 ml) Italian seasoning
  • – 1 medium tomato, chopped


Instructions

  1. Slice each chicken breast into two thinner sections by cutting them lengthwise. Season these pieces with garlic powder, salt, and pepper, then lightly coat them with flour.
  2. In a skillet over medium-high heat, combine the butter and olive oil, allowing the mixture to heat for a few minutes.
  3. Sauté the chicken for approximately 5 to 6 minutes on each side until they are golden brown and fully cooked through (internal temperature should reach 165°F). Remove the chicken from the pan and set it aside on a plate.
  4. Lower the heat to medium, then add the minced garlic and tomato paste to the skillet, stirring for about 20 to 30 seconds.
  5. Gradually whisk in the cream and the Italian seasoning until the mixture is smooth.
  6. Incorporate the chopped tomato into the sauce, letting it simmer for an additional 3 to 5 minutes.
  7. Return the chicken to the skillet, drizzling some sauce over the top. Adjust the seasoning with extra salt and pepper if desired, and serve promptly.
