Ingredients

  • 1lb (454 g) chicken breasts, skinless boneless (2 chicken breasts, sliced horizontally)
  • 1/4 teaspoon (1 ml) salt
  • Black pepper, freshly coarsely ground
  • 1 tablespoon (15 ml) flour
  • 2 tablespoon (30 ml) s olive oil
  • 5 cup (360 ml) s heavy cream
  • 5 cloves garlic, minced
  • 1/2 cup (120 ml) Parmesan cheese, freshly shredded
  • 4 cup (960 ml) s fresh spinach
  • 3 tablespoon (45 ml) s fresh thyme


Instructions

  1. Take approximately 1 pound of chicken breasts, typically equating to two large pieces. Ensure they’re thin by slicing each breast horizontally in half.
  2. In a large shallow dish, coat the chicken with salt and freshly ground black pepper. Dust both sides with a tablespoon of flour.
  3. Warm a large, deep skillet on medium for a couple of minutes until hot, then pour in 2 tablespoons of olive oil. Place the chicken in the pan. Allow it to cook without disturbance for 5 minutes to develop a seared surface.
  4. Turn the chicken over, lower the heat to a low-medium setting, and continue cooking for another 5 minutes. Confirm the internal temperature reaches 165°F (74°C) using a meat thermometer. Once done, transfer the chicken to a plate.
  5. Using the same skillet, pour in the heavy cream and add the minced garlic. Let it come to a boil while scraping up the browned bits with a spatula to incorporate them into the sauce. When boiling, introduce the freshly shredded Parmesan cheese. Lower the heat slightly and stir continuously until the cheese has completely melted, around 2 to 4 minutes.
  6. Incorporate the fresh spinach into the mixture, stirring gently until it begins to wilt and blend into the sauce. Adjust seasoning with salt and pepper as required.
  7. Return the cooked chicken to the skillet. Drizzle the sauce over the center of each chicken piece, leaving the edges visible to showcase the golden-brown crust.
  8. Finish by sprinkling fresh thyme over the dish. Adjust seasoning with a touch more salt and freshly ground black pepper if desired.
