Ingredients
- 1lb (454 g) chicken breasts, skinless boneless (2 chicken breasts, sliced horizontally)
- 1/4 teaspoon (1 ml) salt
- Black pepper, freshly coarsely ground
- 1 tablespoon (15 ml) flour
- 2 tablespoon (30 ml) s olive oil
- 5 cup (360 ml) s heavy cream
- 5 cloves garlic, minced
- 1/2 cup (120 ml) Parmesan cheese, freshly shredded
- 4 cup (960 ml) s fresh spinach
- 3 tablespoon (45 ml) s fresh thyme
Instructions
- Take approximately 1 pound of chicken breasts, typically equating to two large pieces. Ensure they’re thin by slicing each breast horizontally in half.
- In a large shallow dish, coat the chicken with salt and freshly ground black pepper. Dust both sides with a tablespoon of flour.
- Warm a large, deep skillet on medium for a couple of minutes until hot, then pour in 2 tablespoons of olive oil. Place the chicken in the pan. Allow it to cook without disturbance for 5 minutes to develop a seared surface.
- Turn the chicken over, lower the heat to a low-medium setting, and continue cooking for another 5 minutes. Confirm the internal temperature reaches 165°F (74°C) using a meat thermometer. Once done, transfer the chicken to a plate.
- Using the same skillet, pour in the heavy cream and add the minced garlic. Let it come to a boil while scraping up the browned bits with a spatula to incorporate them into the sauce. When boiling, introduce the freshly shredded Parmesan cheese. Lower the heat slightly and stir continuously until the cheese has completely melted, around 2 to 4 minutes.
- Incorporate the fresh spinach into the mixture, stirring gently until it begins to wilt and blend into the sauce. Adjust seasoning with salt and pepper as required.
- Return the cooked chicken to the skillet. Drizzle the sauce over the center of each chicken piece, leaving the edges visible to showcase the golden-brown crust.
- Finish by sprinkling fresh thyme over the dish. Adjust seasoning with a touch more salt and freshly ground black pepper if desired.
