Ingredients
- 4 medium potatoes, diced into bite-sized pieces
- 1 lb sausage (Italian or kielbasa), sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups corn (frozen or fresh)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat a large pot over medium heat and add sliced sausage. Cook until browned, then set aside.
- In the same pot, add chopped onion and minced garlic. Sauté until onions are translucent.
- Add diced potatoes, corn, and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Stir in heavy cream and the cooked sausage. Season with salt and pepper, and gently heat through.
- Garnish with fresh parsley if desired before serving.
