A comforting bowl of creamy roasted tomato soup made with fresh tomatoes, garlic, and basil.
Ingredients
- 5 cups fresh tomatoes, roughly chopped
- 1 white onion, chopped
- 4 garlic cloves, chopped
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp sugar
- Pinch red pepper flakes
- 1/4 cup olive oil
- 3/4 cup heavy cream
- 1/2 cup fresh basil, chopped
Instructions
- In a baking dish, combine the chopped tomatoes, onion, garlic, salt, pepper, sugar, red pepper flakes, and olive oil. Toss them well to ensure that every piece is coated.
- Roast the mixture at 425°F for 30-40 minutes until the tomatoes break down and the onions become tender.
- Once roasted, add the tomato mixture to a blender and puree until smooth.
- Pour the puree into a soup pot and add the heavy cream and chopped basil. Heat through over low-medium heat, stirring gently to combine.
- Taste the soup and adjust seasoning with more salt and pepper if necessary.
Notes
For added texture, consider topping with croutons or parmesan cheese. This soup retains well; make a larger batch for easy meals throughout the week.
