Description

A comforting bowl of creamy roasted tomato soup made with fresh tomatoes, garlic, and basil.


Ingredients

  • 5 cups fresh tomatoes, roughly chopped
  • 1 white onion, chopped
  • 4 garlic cloves, chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp sugar
  • Pinch red pepper flakes
  • 1/4 cup olive oil
  • 3/4 cup heavy cream
  • 1/2 cup fresh basil, chopped


Instructions

  1. In a baking dish, combine the chopped tomatoes, onion, garlic, salt, pepper, sugar, red pepper flakes, and olive oil. Toss them well to ensure that every piece is coated.
  2. Roast the mixture at 425°F for 30-40 minutes until the tomatoes break down and the onions become tender.
  3. Once roasted, add the tomato mixture to a blender and puree until smooth.
  4. Pour the puree into a soup pot and add the heavy cream and chopped basil. Heat through over low-medium heat, stirring gently to combine.
  5. Taste the soup and adjust seasoning with more salt and pepper if necessary.

Notes

For added texture, consider topping with croutons or parmesan cheese. This soup retains well; make a larger batch for easy meals throughout the week.
