Ingredients
- 8oz (227 g). bowtie pasta
- 16oz (454 g). baby bella mushrooms
- 2 Tbsp (30 ml) olive oil
- 2 Tbsp (30 ml) vegetable oil
- 2 cloves garlic
- 2 cup (480 ml) s fresh spinach
- Salt and pepper to taste
- 1/2 cup (120 ml) whole milk ricotta
- 1 pinch crushed red pepper (optional )
Instructions
- Heat a large pot of water until it starts to boil vigorously, then add the bowtie pasta. Let it cook until it’s soft, approximately 7 minutes. Before draining it using a colander, save half a cup of the cooking water.
- As the pasta cooks, prepare the other components. Clean and slice the baby bella mushrooms, then place them in a big frying pan with the olive oil. Cook them over medium heat until they release moisture, it evaporates, and they start to caramelize, which should take around 7 minutes.
- While the mushrooms are on the stove, finely chop the garlic. Once the mushrooms are browned, add the garlic and vegetable oil, continuing to cook over medium heat for an additional 1-2 minutes until the garlic becomes slightly tender.
- At this point, the pasta should be ready. Pour about 1/4 cup of the saved pasta water into the pan, stirring to loosen any browned bits stuck to the bottom. The combination of the starchy water and oil will create a thin sauce that helps the salt and pepper stick to the pasta.
- Introduce the fresh spinach to the pan, stirring until it wilts, which should take about a minute. Add the drained pasta and mix until all ingredients are well combined. Turn off the heat and generously season with salt and pepper. If the pasta seems too dry, pour in a bit more of the reserved pasta water.
- Lastly, place spoonfuls of ricotta over the pasta. Sprinkle with a touch of crushed red pepper if you like, and serve it hot.
