Ingredients

  • 2 large boneless/skinless chicken breast
  • 2 teaspoon (10 ml) s Italian seasoning
  • Salt/Pepper
  • 2 tablespoon (30 ml) s butter, melted
  • 1-2 tablespoon (23 ml) s olive oil
  • 5 oz (298 g). cream of chicken soup
  • 1 1/2 cup (360 ml) s milk
  • 1 cup (240 ml) sour cream, at room temp
  • 1/2 teaspoon (3 ml) onion powder
  • 1 oz (28 g). packet Ranch seasoning mix


Instructions

  1. Cut the chicken breasts into 2-3 thinner pieces. If needed, use a meat mallet to flatten them slightly, as they will swell during cooking. Aim for slices that are about ½ inch thick.
  2. Season both sides of the chicken slices with Italian herbs, salt, and pepper. Lightly brush one side with melted butter, ensuring the butter has cooled slightly.
  3. Warm olive oil in a large frying pan over medium-high heat. Cook the chicken in portions, allowing each side to brown for 4-5 minutes until a crispy, golden crust forms. Once done, take them out and put them aside.
  4. In the same pan, combine the sauce ingredients and heat over medium. Stir until everything is well-blended, allowing it to simmer gently for 5 minutes to thicken slightly. Return the chicken to the pan, coating them with the sauce.
  5. Partially cover the pan and let the chicken cook through, soaking up the sauce’s flavors, for approximately 10 minutes.
  6. If desired, serve alongside baked potatoes, drizzling the sauce over each potato for added flavor.
