Ingredients
- 2 tablespoons (30 ml) vegetable oil, plus more for serving
- 2 tablespoons (28 g) unsalted butter
- 1 medium yellow onion, chopped
- ½ teaspoon (2.5 ml) sea salt
- Freshly ground black pepper
- 1 pound (454 g) white button mushrooms, stemmed and sliced
- 8 ounces (227 g) cremini mushrooms, stemmed and sliced
- 2 garlic cloves, grated
- ¼ cup (60 ml) apple juice
- 3 cups (720 ml) vegetable broth
- 1 tablespoon (15 ml) soy sauce
- 1 tablespoon (1.6 g) fresh thyme leaves, plus more for garnish
- ½ cup (120 ml) coconut milk, optional, plus more for serving
- Chopped fresh parsley, for garnish
Instructions
- Warm the vegetable oil and butter in a big pot over medium heat. Introduce the chopped onion, sea salt, and some black pepper, cooking for about 2 minutes until slightly softened. Add half of the sliced mushrooms and stir occasionally for 5 minutes until they become tender. Incorporate the rest of the mushrooms and continue cooking for another 5 minutes.
- Mix in the grated garlic, then pour in the apple juice, vegetable broth, soy sauce, and thyme leaves. Cover and let it gently cook for 15 minutes.
- Let the soup cool a bit, then move two-thirds of it to a blender and blend until smooth.
- Combine the blended soup back with the chunky portion in the pot. Optionally, add the coconut milk and let it heat for another 2 minutes until warmed through and the coconut milk flavor is well incorporated. Adjust the seasoning if needed.
- Serve the soup in bowls, garnished with a drizzle of vegetable oil and/or coconut milk, and sprinkle with fresh parsley and thyme.

- For a more flavorful soup, consider using a mix of white button and cremini mushrooms.
- Blend most of the soup for a smooth texture, while leaving some chunks for texture.
