Ingredients
- 1 lb fresh mushrooms (cremini, shiitake, or your choice)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1/4 cup all-purpose flour (or cornstarch for gluten-free)
- 1/4 tsp thyme (or your favorite herb)
- Salt and pepper to taste
- Olive oil for sautéing
- Optional garnish: fresh herbs or croutons
Instructions
- In a large pot, heat a tablespoon of olive oil over medium heat. Sauté the diced onion until translucent, about 3-4 minutes.
- Add the minced garlic and sliced mushrooms. Continue to cook until the mushrooms soften and release their moisture.
- Sprinkle the flour over the mushroom mixture, stirring well to combine. Cook for an additional 2-3 minutes to eliminate the raw flour taste.
- Gradually pour in the vegetable broth while stirring to prevent lumps. Bring the mixture to a gentle boil.
- Reduce heat and let the soup simmer for 15 minutes. Add thyme, salt, and pepper to taste.
- Blend the soup using an immersion blender or transfer it to a regular blender for a smoother consistency.
- Adjust seasoning as needed, and serve hot, garnished with fresh herbs or croutons if desired.
Notes
For a gluten-free version, substitute the flour with cornstarch. Experiment with herbs and spices to find the perfect blend for your taste.
