Description

Ingredients

  • 1 lb fresh mushrooms (cremini, shiitake, or your choice)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/4 cup all-purpose flour (or cornstarch for gluten-free)
  • 1/4 tsp thyme (or your favorite herb)
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional garnish: fresh herbs or croutons


Instructions

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Sauté the diced onion until translucent, about 3-4 minutes.
  2. Add the minced garlic and sliced mushrooms. Continue to cook until the mushrooms soften and release their moisture.
  3. Sprinkle the flour over the mushroom mixture, stirring well to combine. Cook for an additional 2-3 minutes to eliminate the raw flour taste.
  4. Gradually pour in the vegetable broth while stirring to prevent lumps. Bring the mixture to a gentle boil.
  5. Reduce heat and let the soup simmer for 15 minutes. Add thyme, salt, and pepper to taste.
  6. Blend the soup using an immersion blender or transfer it to a regular blender for a smoother consistency.
  7. Adjust seasoning as needed, and serve hot, garnished with fresh herbs or croutons if desired.

Notes
