Description

Rich and savory creamy mushroom soup, perfect for cozy evenings and family gatherings.


Ingredients

  • 1 pound of fresh mushrooms (or dried, soaked in warm water)
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 4 cups of vegetable or chicken broth
  • 1/2 cup of flour (or cornstarch for gluten-free)
  • Salt and pepper to taste
  • Olive oil or butter for sautéing
  • Fresh herbs, such as thyme or parsley, for garnish (optional)


Instructions

  1. Heat oil or butter in a large pot over medium heat. Add the diced onion and sauté until translucent.
  2. Stir in the minced garlic and cook until fragrant.
  3. If using fresh mushrooms, slice them and add to the pot. If using dried mushrooms, ensure they are rehydrated and chopped before adding. Cook until softened.
  4. Sprinkle flour (or cornstarch) over the mixture and toss to coat evenly.
  5. Gradually pour in the broth, stirring constantly to prevent lumps. Bring to a simmer and allow flavors to meld for about 10 minutes.
  6. Season with salt and pepper to taste. Blend part of the soup for a creamy finish, adjusting the consistency with additional broth if necessary.

Notes

For a gluten-free option, substitute flour with cornstarch. Taste and adjust seasoning as you cook.
