Ingredients
- 1 pound of fresh mushrooms (or dried, soaked in warm water)
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 4 cups of vegetable or chicken broth
- 1/2 cup of flour (or cornstarch for gluten-free)
- Salt and pepper to taste
- Olive oil or butter for sautéing
- Fresh herbs, such as thyme or parsley, for garnish (optional)
Instructions
- Heat oil or butter in a large pot over medium heat. Add the diced onion and sauté until translucent.
- Stir in the minced garlic and cook until fragrant.
- If using fresh mushrooms, slice them and add to the pot. If using dried mushrooms, ensure they are rehydrated and chopped before adding. Cook until softened.
- Sprinkle flour (or cornstarch) over the mixture and toss to coat evenly.
- Gradually pour in the broth, stirring constantly to prevent lumps. Bring to a simmer and allow flavors to meld for about 10 minutes.
- Season with salt and pepper to taste. Blend part of the soup for a creamy finish, adjusting the consistency with additional broth if necessary.

For a gluten-free option, substitute flour with cornstarch. Taste and adjust seasoning as you cook.
