Description

Ground chicken meatballs paired with a creamy mushroom sauce, perfect for a comforting family meal.

Ingredients

  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, salt, and black pepper in a bowl.
  2. Mix thoroughly until well combined, then shape into meatballs.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the meatballs and cook for about 6-8 minutes, turning to brown on all sides.
  5. Remove the browned meatballs from the skillet and set aside.
  6. Sauté the sliced mushrooms in the same skillet until softened.
  7. Pour in the heavy cream and chicken broth, then add the Italian seasoning and bring to a simmer.
  8. Return the meatballs to the skillet and cook in the sauce for another 10 minutes until thickened.

Notes

For a lighter version, you can substitute ground turkey for chicken.
