Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz fresh mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Heat your skillet over medium-high heat and add the tablespoon of olive oil.
  2. Sprinkle salt, pepper, and Italian seasoning over the chicken breasts, ensuring an even coating.
  3. Sear the chicken in the hot skillet for 5-7 minutes on each side until golden brown.

  5. In the same skillet, add the sliced mushrooms and sauté until they start to soften.
  6. Add minced garlic and cook for another minute, releasing its fragrant aroma.
  7. Mix in the fresh spinach and continue to cook until wilted.
  8. Pour in the heavy cream, bringing it to a gentle simmer.
  9. Stir in the grated Parmesan cheese, allowing it to melt and thicken the sauce.
  10. Pour this creamy mixture over the chicken breasts in the baking dish.
  11. Bake for 25-30 minutes, ensuring the chicken is fully cooked through and reaches an internal temperature of 165°F (74°C).
