Description

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion and minced garlic for about 3-4 minutes until translucent.
  2. Add the Italian sausage to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
