Ingredients
- 1 lb Italian sausage (mild or spicy)
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, chopped
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- ½ cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Sauté the diced onion and minced garlic for about 3-4 minutes until translucent.
- Add the Italian sausage to the pot, breaking it apart with a wooden spoon. Cook until browned, about 5-7 minutes.
- Stir in the diced carrots and chopped celery, then pour in the chicken broth and bring to a gentle simmer.
- Reduce the heat slightly and stir in the heavy cream until mixed thoroughly.
- Add the fresh spinach and stir until it wilts. Serve hot, topped with grated Parmesan cheese.
