Ingredients
- 2 cups plain Greek yogurt
- 2 tablespoons Dijon mustard
- 2 tablespoons lemon juice
- 2 teaspoons garlic powder
- 12 oz. Brami fusilli pasta
- 1 cup cherry tomatoes (halved)
- 1 cup English cucumbers (chopped)
- 1 pound cooked chicken breast (diced)
- 4 oz. fresh mozzarella, diced
- 2 tablespoons fresh herbs (chopped)
Instructions
- Cook the Brami fusilli pasta according to the package directions until it reaches al dente consistency.
- Drain the cooked pasta, then rinse it under cold water to stop the cooking process and cool down the pasta.
- Mix together the Greek yogurt, Dijon mustard, lemon juice, and garlic powder in a small bowl until well combined and creamy.
- Combine the cooled pasta with the cherry tomatoes, English cucumbers, diced chicken breast, and mozzarella in a large bowl.
- Pour the creamy dressing over the salad ingredients and gently stir to coat everything evenly.
- Season with salt and pepper to taste.
Notes
Chill the pasta salad for at least 30 minutes before serving to let flavors meld. Experiment with additional ingredients like red onion or chickpeas for variation.
