Ingredients
- 4 pound (1.81 kg) whole chicken
- 5 cup (120 ml) unsalted butter
- 5 cup (120 ml) grated parmesan cheese
- 4 medium russet potato
- 6 large carrot
- 8 clove garlic
- 2 tablespoon (30 ml) honey
- 25 cup (60 ml) milk
- 2 tablespoon (30 ml) olive oil
- 2 teaspoon (10 ml) dried thyme
- 1 teaspoon (5 ml) dried rosemary
- 1 teaspoon (5 ml) dried parsley
- 1 teaspoon (5 ml) salt
- 5 teaspoon (3 ml) black pepper
Instructions
- Set your oven to 375°F (190°C) for preheating. Dry the chicken with paper towels and position it in a sizable roasting dish. Combine the softened butter, crushed garlic, thyme, rosemary, salt, and pepper in a small container. Spread this garlic-herb mixture thoroughly over the chicken, ensuring to get some under the skin as well.
- Put the chicken in the warmed oven and let it roast for 60-75 minutes, or until the thickest part of the thigh measures 165°F (74°C) internally. Every 15 minutes, spoon some of the pan juices over the chicken.
- As the chicken cooks, fill a large pot with water and bring it to a boil. Add the sliced potatoes and boil them until they are easily pierced with a fork, which should take about 15-20 minutes. Once done, drain and return them to the pot. Pour in the milk, sprinkle in the grated parmesan, salt, and pepper, and mash until the mixture becomes smooth and creamy.
- In a separate medium-sized pot, bring a small amount of water to a rolling boil. Add the carrot pieces and cook them for 12-15 minutes, or until they become soft. Drain them and place them back into the pot, then drizzle in the honey and mix until evenly coated.
