Ingredients

  • 1 tbsp (15 ml) vegetable oil (avocado oil or olive oil)
  • 1 lb (454 g) boneless, skinless chicken breast, butterflied or beaten down to about 1/2″ thickness
  • 1 tbsp (15 ml) Italian seasoning
  • 1/2 tsp (3 ml) paprika
  • salt & pepper to taste
  • 1 tbsp (15 ml) vegetable oil (avocado oil or olive oil)
  • 1 tbsp (15 ml) unsalted butter
  • 1/2 jumbo yellow onion, diced (1 cup (240 ml))
  • 4-6 large cloves garlic, minced
  • 8 oz (227 g) dry penne pasta (normal, gluten-free, or protein pasta)
  • 2 cups (475 ml) chicken broth
  • 1 cup (100 g) finely grated Parmesan cheese
  • 1/2 cup (120 ml) coconut cream
  • 2 tbsp (30 ml) chopped parsley


Instructions

  1. In a small dish, combine the Italian seasoning, paprika, and a pinch of salt and pepper. Dry the chicken thoroughly and coat both sides with the spice blend.
  2. Place a large skillet over medium heat. Once heated, pour in the avocado oil. Add the seasoned chicken and cook for 3-5 minutes on each side, ensuring the internal temperature reaches 165°F. Take the chicken out of the skillet and let it rest.
  3. Lower the heat to medium-low and add more avocado oil along with the butter. Incorporate the onion, season with salt, and cook while stirring occasionally for about 3 minutes until it starts to soften and turn translucent. Add the garlic, stir, and cook for an additional minute.
  4. Pour the chicken broth into the skillet, stirring to release any browned bits from the bottom. Let the broth come to a gentle boil. Add the dry pasta, ensuring it is fully immersed in the liquid.
  5. Cover the skillet and let it cook for about 10 minutes, or until the pasta reaches al-dente perfection.
  6. Turn off the heat and mix in the Parmesan cheese, coconut cream, and parsley. Stir until the cheese melts and the sauce thickens slightly. Adjust the seasoning with salt and pepper if necessary.
  7. Slice the rested chicken into strips and add it to the skillet with the pasta. Toss everything together, then serve and savor!
