Ingredients

  • 500g (1lb) boneless chicken thighs, chopped into bite-size pieces
  • 2 tbsp (30 ml) vegetable oil
  • 3 garlic cloves, crushed/minced
  • 1 cup (240 ml) heavy/whipping cream
  • 1 tsp (5 ml) dried thyme
  • 2-3 cups (600 ml) broccoli, sliced into small florets
  • 3/4 cup (180 ml) grated cheese
  • 1 tsp (5 ml) lemon juice
  • Salt and pepper, to taste
  • 500g (1lb) pasta, cooked + 240ml (1 cup) cooking water reserved


Instructions

  1. Fill a large pot with water, add salt, and bring it to a boil.
  2. Place the pasta in the boiling water and cook until it is firm yet tender; save 1 cup of the water before draining.
  3. Warm a large skillet over medium-high heat.
  4. Coat the chicken with a little vegetable oil, then sprinkle with salt and pepper.
  5. Cook the chicken in the skillet until it turns white and begins to brown, then take it out and set it aside.
  6. Introduce the garlic, thyme, and some vegetable oil into the skillet and let them cook briefly for half a minute.
  7. Add the cream and lemon juice, allowing the mixture to reach a simmer; then, return the chicken to the pan along with the broccoli. Cover partially and let it simmer for 5-7 minutes until everything is done.
  8. Incorporate the grated cheese into the sauce, stirring to combine. Adjust the seasoning with salt and pepper.
  9. Mix in the pasta, adding some of the reserved pasta water if needed to ensure the pasta is thoroughly coated in the creamy sauce. Serve without delay.
