Description

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 cup corn, frozen or canned
  • 1 can black beans, drained
  • 2 medium potatoes, diced
  • 1 cup heavy cream or half-and-half
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and black pepper to taste
  • Sliced green onions for garnish
  • Crushed tortilla chips for topping


Instructions

  1. In a large pot or Dutch oven, cook ground beef over medium heat until browned, breaking it apart as it cooks.
  2. Add diced onions and minced garlic; cook until onions are translucent.
  3. Stir in beef broth, diced tomatoes, corn, black beans, and diced potatoes; mix well.
  4. Bring to a simmer and cook for 20-30 minutes until the potatoes are soft.
  5. Slowly stir in heavy cream, allowing it to fully integrate.
  6. Adjust seasoning with salt and black pepper to taste.
  7. Serve hot, garnished with sliced green onions and crushed tortilla chips.
