Ingredients
- 8 oz (225 g) chicken breast, cut into bite-sized pieces
- 1 can (411 g) chicken broth
- 1 package (255 g) refrigerated cheese tortellini
- 2 cans (595 g) cream of chicken soup
- 2 cups (480 ml) half-and-half
- 1 package (283 g) frozen chopped spinach, thawed and drained
- 1/2 tsp (3 ml) thyme
- 1/4 tsp (1 ml) ground black pepper
Instructions
- Fill a pot with water and heat until it reaches a rolling boil. Submerge the chicken pieces in the boiling water and cook until they are no longer pink in the center, approximately 7 to 10 minutes. Drain the water.
- In a large soup pot, heat the chicken broth until it starts to boil. Add the cheese tortellini, then lower the heat to a medium-low setting, cooking until the tortellini are tender and cooked through, about 8 minutes.
- Combine the cooked chicken, cream of chicken soup, half-and-half, thawed spinach, thyme, and black pepper with the tortellini in the pot. Bring the mixture to a gentle simmer and cook until everything is thoroughly heated, about 7 to 10 minutes. Serve while hot.
