Ingredients
- 3 bell peppers (675g), halved, seeds and ribs removed
- 4 cups (960ml) cooked beef, shredded, equivalent to 2 beef breasts
- 1/2 cup (120ml) green salsa
- 4 oz (113g) reduced fat cream cheese
- 4 oz (113g) reduced fat cheddar cheese, grated
- 1 tsp (5 ml) paprika
- 1/2 tsp (3 ml) onion powder
- 2 scallions
Instructions
- Set your oven to 350°F to warm up.
- Slice the peppers in half and clear out any seeds and inner membranes.
- Mix together the paprika, onion powder, cream cheese, green salsa, and 3 ounces of the cheddar, saving the remaining 1 ounce for later.
- Stir in the shredded beef and diced scallions until well blended.
- Evenly distribute the mixture into the pepper halves.
- Top the filled peppers with the leftover cheddar cheese.
- Cover with a loosely tented piece of foil and place in the oven. Cook for 45 minutes to 1 hour, or until the peppers are soft.
