Ingredients

  • 3 bell peppers (675g), halved, seeds and ribs removed
  • 4 cups (960ml) cooked beef, shredded, equivalent to 2 beef breasts
  • 1/2 cup (120ml) green salsa
  • 4 oz (113g) reduced fat cream cheese
  • 4 oz (113g) reduced fat cheddar cheese, grated
  • 1 tsp (5 ml) paprika
  • 1/2 tsp (3 ml) onion powder
  • 2 scallions


Instructions

  1. Set your oven to 350°F to warm up.
  2. Slice the peppers in half and clear out any seeds and inner membranes.
  3. Mix together the paprika, onion powder, cream cheese, green salsa, and 3 ounces of the cheddar, saving the remaining 1 ounce for later.
  4. Stir in the shredded beef and diced scallions until well blended.
  5. Evenly distribute the mixture into the pepper halves.
  6. Top the filled peppers with the leftover cheddar cheese.
  7. Cover with a loosely tented piece of foil and place in the oven. Cook for 45 minutes to 1 hour, or until the peppers are soft.
