Ingredients
- 1 cup orzo pasta
- 1 lb chicken breast, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup peas
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tsp garlic powder
- 1 tsp thyme
- Salt to taste
- Pepper to taste
Instructions
- Melt butter in a large skillet over medium heat.
- Add onion, carrots, and celery; cook until softened.
- Stir in diced chicken and cook until golden brown.
- Add garlic powder, thyme, salt, and pepper; mix well.
- Pour in chicken broth and bring to a boil.
- Add orzo and cook until al dente, stirring occasionally.
- Stir in heavy cream and peas; adjust seasoning.
- Serve in a large bowl, garnished with fresh herbs if desired.
Notes
For a lighter dish, use half-and-half instead of heavy cream. Store leftovers in an airtight container for up to three days.
