Description

Ingredients

  • 1 cup orzo pasta
  • 1 lb chicken breast, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup peas
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp thyme
  • Salt to taste
  • Pepper to taste


Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add onion, carrots, and celery; cook until softened.
  3. Stir in diced chicken and cook until golden brown.
  4. Add garlic powder, thyme, salt, and pepper; mix well.
  5. Pour in chicken broth and bring to a boil.
  6. Add orzo and cook until al dente, stirring occasionally.
  7. Stir in heavy cream and peas; adjust seasoning.
  8. Serve in a large bowl, garnished with fresh herbs if desired.

Notes

For a lighter dish, use half-and-half instead of heavy cream. Store leftovers in an airtight container for up to three days.
