Description

Ingredients

  • 3 chicken breasts, boneless, skinless
  • 3 Tbsp (45 ml). olive oil, divided
  • 8 oz (227 g). mushrooms, thinly sliced
  • 1/2 white onion, diced small
  • 2 tsp (10 ml). garlic, minced
  • 1 cup (240 ml) beef broth
  • 3 cup (720 ml) s heavy cream
  • 1 lb (454 g). orecchiette pasta, uncooked (or any other short pasta shape of choice)
  • 1 tsp (5 ml). salt and pepper to taste
  • 1 tsp (5 ml). oregano, dried
  • 1 tsp (5 ml). basil, dried
  • 1/2 tsp (3 ml). thyme, dried
  • 1-2 Tbsp (23 ml). cornstarch
  • 2 Tbsp (30 ml). milk
  • 1/4 cup (60 ml) Parmesan, freshly grated
  • 1/2 bunch fresh parsley, chopped


Instructions

  1. Cut the chicken into small, bite-sized chunks.
  2. In a large pot, warm 2 tablespoons of olive oil over medium-high heat. Add the chicken pieces and season them with salt and pepper. Cook thoroughly until there is no pink remaining. Transfer the cooked chicken to a plate and set aside.
  3. Pour the remaining tablespoon of olive oil into the pot, then add the mushrooms, onions, and garlic. Stir occasionally while cooking for about 2-3 minutes at medium temperature.
  4. Return the chicken to the pot.
  5. Add the beef broth, heavy cream, pasta, and dried herbs.
  6. Increase the heat to bring it all to a boil. Cover the pot, lower the heat to a gentle simmer, and let it cook for 10-12 minutes or until the pasta is tender. Remove the lid.
  7. In a small bowl, combine cornstarch with milk. Add this mixture to the pot to help thicken the sauce. Bring everything back to a boil for 5-10 minutes, adding more cornstarch if needed to reach your desired thickness.
  8. Finish by sprinkling fresh Parmesan and parsley on top. Serve right away.

Notes

  • Note: To lighten the dish, swap half of the heavy cream for half-and-half or milk for a less rich sauce.
  • Second note: Add extra veggies like spinach, bell peppers, or cherry tomatoes for more color and nutrients.
  • Third note: Marinate the chicken in olive oil, lemon juice, and herbs before cooking to enhance the flavor profile.
