Ingredients
- 3 chicken breasts, boneless, skinless
- 3 Tbsp (45 ml). olive oil, divided
- 8 oz (227 g). mushrooms, thinly sliced
- 1/2 white onion, diced small
- 2 tsp (10 ml). garlic, minced
- 1 cup (240 ml) beef broth
- 3 cup (720 ml) s heavy cream
- 1 lb (454 g). orecchiette pasta, uncooked (or any other short pasta shape of choice)
- 1 tsp (5 ml). salt and pepper to taste
- 1 tsp (5 ml). oregano, dried
- 1 tsp (5 ml). basil, dried
- 1/2 tsp (3 ml). thyme, dried
- 1-2 Tbsp (23 ml). cornstarch
- 2 Tbsp (30 ml). milk
- 1/4 cup (60 ml) Parmesan, freshly grated
- 1/2 bunch fresh parsley, chopped
Instructions
- Cut the chicken into small, bite-sized chunks.
- In a large pot, warm 2 tablespoons of olive oil over medium-high heat. Add the chicken pieces and season them with salt and pepper. Cook thoroughly until there is no pink remaining. Transfer the cooked chicken to a plate and set aside.
- Pour the remaining tablespoon of olive oil into the pot, then add the mushrooms, onions, and garlic. Stir occasionally while cooking for about 2-3 minutes at medium temperature.
- Return the chicken to the pot.
- Add the beef broth, heavy cream, pasta, and dried herbs.
- Increase the heat to bring it all to a boil. Cover the pot, lower the heat to a gentle simmer, and let it cook for 10-12 minutes or until the pasta is tender. Remove the lid.
- In a small bowl, combine cornstarch with milk. Add this mixture to the pot to help thicken the sauce. Bring everything back to a boil for 5-10 minutes, adding more cornstarch if needed to reach your desired thickness.
- Finish by sprinkling fresh Parmesan and parsley on top. Serve right away.

- Note: To lighten the dish, swap half of the heavy cream for half-and-half or milk for a less rich sauce.
