Description

A delightful one-pot creamy broccoli pasta featuring tender pasta, fresh broccoli, and a rich creamy sauce with Parmesan.


Ingredients

  • 8 oz penne or rotini pasta
  • 3 cups broccoli florets
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste


Instructions

  1. Heat the oil or butter in a large pot over medium heat and sauté the minced garlic for 1-2 minutes.
  2. Add the pasta and broth, bringing the mixture to a boil. Reduce heat to a simmer.
  3. At the halfway point of the pasta’s cooking time, stir in the broccoli florets.
  4. After 10-12 minutes, or once the pasta is al dente, mix in the heavy cream and Parmesan cheese.
  5. Stir thoroughly, season with salt and pepper to taste, and serve warm.

Notes

For added flavor, consider incorporating red pepper flakes or swapping in other vegetables like spinach or peas.
