A delightful one-pot creamy broccoli pasta featuring tender pasta, fresh broccoli, and a rich creamy sauce with Parmesan.
Ingredients
- 8 oz penne or rotini pasta
- 3 cups broccoli florets
- 2 cups vegetable or chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
Instructions
- Heat the oil or butter in a large pot over medium heat and sauté the minced garlic for 1-2 minutes.
- Add the pasta and broth, bringing the mixture to a boil. Reduce heat to a simmer.
- At the halfway point of the pasta’s cooking time, stir in the broccoli florets.
- After 10-12 minutes, or once the pasta is al dente, mix in the heavy cream and Parmesan cheese.
- Stir thoroughly, season with salt and pepper to taste, and serve warm.

For added flavor, consider incorporating red pepper flakes or swapping in other vegetables like spinach or peas.
