Ingredients
- – 1/2 cup (120 ml) mayonnaise
- – 1/4 cup (60 ml) plain Greek yogurt, I prefer light Greek yogurt
- – 1 teaspoon (5 ml) fresh lemon juice
- – 1 tablespoon (15 ml) minced flat leaf parsley
- – 1/4 teaspoon (1 ml) dried dill
- – 3 cups (720 ml) chopped or shredded cooked chicken, I use white meat from a rotisserie chicken
- – 1/2 cup (120 ml) finely chopped celery or finely chopped apple
- – 1/3 cup (80 ml) dried cranberries
- – 1/3 cup (80 ml) chopped toasted almonds, see note
- – salt and pepper to taste
Instructions
- In a big mixing bowl, blend together the mayonnaise, Greek yogurt, lemon juice, parsley, and dill using a whisk.
- Incorporate the rest of the ingredients and mix until well combined.
- Season with salt and pepper according to your preference.
- Serve cold, either on bread or atop lettuce.
Notes
- Toast the walnuts in a dry pan over medium heat for added crunch before chopping.
- Try using chopped apples instead of celery for a sweeter flavor twist.
