Ingredients
- 1 batch Apple Cider Vinaigrette
- 5 oz (155 g) spring mix lettuce
- 120 g dried cranberries
- 120 g crumbled cheese
- 1 honey crisp apple, sliced or diced
- 60 g walnuts, chopped
- 1 red onion, sliced
- 65 g roasted, salted pumpkin seeds
- 1 sweet potato, large, peeled, chopped
- 5 ml vegetable oil
- 5 ml salt
- 5 ml pepper
Instructions
- Prepare the sweet potatoes: Combine the chopped sweet potatoes with a teaspoon of oil, salt, and pepper in a small container. Cook them in an air fryer at 400°F for 10-12 minutes, or bake on a tray in the oven at 425°F for 15-20 minutes until they are crispy and golden.
- As the sweet potatoes are cooking, prepare the vinaigrette. Combine all vinaigrette ingredients in a small bowl and whisk thoroughly. Alternatively, you can shake them together in a jar.
- In a large serving bowl, place the spring mix lettuce and arrange the salad ingredients on top, including the cooled sweet potatoes once they are ready.
- Drizzle the vinaigrette over the salad and serve right away.
