Ingredients

  • 1 batch Apple Cider Vinaigrette
  • 5 oz (155 g) spring mix lettuce
  • 120 g dried cranberries
  • 120 g crumbled cheese
  • 1 honey crisp apple, sliced or diced
  • 60 g walnuts, chopped
  • 1 red onion, sliced
  • 65 g roasted, salted pumpkin seeds
  • 1 sweet potato, large, peeled, chopped
  • 5 ml vegetable oil
  • 5 ml salt
  • 5 ml pepper


Instructions

  1. Prepare the sweet potatoes: Combine the chopped sweet potatoes with a teaspoon of oil, salt, and pepper in a small container. Cook them in an air fryer at 400°F for 10-12 minutes, or bake on a tray in the oven at 425°F for 15-20 minutes until they are crispy and golden.
  2. As the sweet potatoes are cooking, prepare the vinaigrette. Combine all vinaigrette ingredients in a small bowl and whisk thoroughly. Alternatively, you can shake them together in a jar.
  3. In a large serving bowl, place the spring mix lettuce and arrange the salad ingredients on top, including the cooled sweet potatoes once they are ready.
  4. Drizzle the vinaigrette over the salad and serve right away.
