Ingredients
- 1 1/2 lbs (680 g) beef stew meat
- 2 1/2 Tbsp (37 ml) vegetable oil, divided
- Salt and freshly ground black pepper
- 1 3/4 cups (420 ml) chopped yellow onion (1 large)
- 1 1/4 cups (300 g) peeled and chopped carrots (3 medium)
- 1 cup (240 ml) chopped celery (3 medium)
- 1 1/2 Tbsp (22 ml) minced garlic (4 cloves)
- 8 cups (1.9 L) low-sodium beef broth or chicken broth
- 2 (14 oz.) cans (400 g) diced tomatoes
- 1 1/2 tsp (8 ml) dried basil
- 1 tsp (5 ml) dried oregano
- 1/2 tsp (3 ml) dried thyme
- 1 lb (450 g) red or yellow potatoes, chopped into 3/4-inch cubes
- 1 1/2 cups (150 g) chopped green beans (trim ends first)
- 1 1/2 cups (180 g) frozen corn
- 1 cup (175 g) frozen peas
- 1/3 cup (13 g) chopped fresh parsley
Instructions
- Warm 1 tablespoon of vegetable oil in a large pot over medium-high heat.
- Pat the beef dry using paper towels, sprinkle with salt and pepper, then add half the beef to the pot and sear for about 4 minutes, turning halfway.
- Move the browned beef to a plate, pour in another 1/2 tablespoon of oil, and repeat the browning process with the rest of the beef.
- Add an additional tablespoon of oil to the now-empty pot and toss in the onions, carrots, and celery, cooking for 3 minutes; then add the garlic and cook for another minute.
- Pour in the broth, diced tomatoes, seared beef, basil, oregano, thyme, and a pinch of salt and pepper. Allow it to reach a boil before lowering the heat, covering, and letting it simmer for 30 minutes, stirring occasionally.
- Introduce the chopped potatoes and continue simmering with the lid on for another 20 minutes (if you prefer very soft green beans, add them with the potatoes).
- Mix in the green beans and let the mixture simmer for an additional 15 minutes, or until both the vegetables and beef are tender.
- Add the corn and peas, allowing the soup to heat through for approximately 5 minutes. Finish by stirring in the parsley and serve while warm.
