Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, diced (Yukon Gold or Russet)
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 cups kale or spinach, chopped
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional)
  • 1 tbsp olive oil (if needed, for sautéing)
  • ½ cup grated Parmesan cheese (for garnish)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until fragrant and the onion turns translucent.
  2. Add the Italian sausage, breaking it apart, and cook until browned and fully cooked.
  3. Stir in the diced potatoes and chicken broth. Bring to a boil and then reduce heat to simmer until potatoes are tender, about 15-20 minutes.
  4. Incorporate the heavy cream (or half-and-half), followed by the chopped kale or spinach. Season with salt, black pepper, and crushed red pepper flakes if desired.
