Ingredients
- 1 lb Italian sausage (mild or spicy)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, diced (Yukon Gold or Russet)
- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half)
- 2 cups kale or spinach, chopped
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional)
- 1 tbsp olive oil (if needed, for sautéing)
- ½ cup grated Parmesan cheese (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, cooking until fragrant and the onion turns translucent.
- Add the Italian sausage, breaking it apart, and cook until browned and fully cooked.
- Stir in the diced potatoes and chicken broth. Bring to a boil and then reduce heat to simmer until potatoes are tender, about 15-20 minutes.
- Incorporate the heavy cream (or half-and-half), followed by the chopped kale or spinach. Season with salt, black pepper, and crushed red pepper flakes if desired.
- Ladle the hot soup into bowls and garnish with grated Parmesan cheese. Serve with crusty bread or crackers.
Notes
For a thicker soup, puree a portion and stir back. Experiment with herbs for extra flavor.
