Ingredients

  • – 2 tablespoons (30 ml) olive oil
  • – 1 onion, diced
  • – 1 large carrot, diced
  • – 2 celery stalks, diced
  • – 2 garlic cloves, minced
  • – 1/2 teaspoon (3 ml) dried oregano
  • – 1/2 teaspoon (3 ml) dried basil
  • – 1/2 teaspoon (3 ml) salt
  • – 1/2 cabbage, chopped
  • – 1 (400 g) can diced tomatoes
  • – 4 to 6 cups (960 to 1440 ml) vegetable broth, depending how thick or brothy you’d like it
  • – 1 to 2 tablespoons (15 to 30 ml) lemon juice
  • – ¼ cup (60 ml) roughly chopped fresh parsley
  • – cracked black pepper, to taste


Instructions

  1. Warm up the cooking oil in a large pot over medium to high heat, then introduce the chopped onions, carrot, and celery. Sauté them for 4 to 5 minutes.
  2. Incorporate the minced garlic and seasonings, stirring for an additional minute.
  3. Add the chopped cabbage and allow it to cook down for 5 minutes, stirring regularly.
  4. Combine the vegetable broth and canned tomatoes, and let the mixture simmer without a lid for 10 minutes, or until the vegetables reach your preferred tenderness.
  5. Take the soup off the heat, then mix in the lemon juice, parsley, and a sprinkle of cracked black pepper. Stir once more before serving.
