Description

A hearty and comforting Cowboy Soup made with ground beef, vegetables, and flavorful spices, perfect for family gatherings.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 2 lbs ground beef
  • 1 lb Yukon gold potatoes, cut into 1-inch pieces
  • 4 carrots, peeled and sliced
  • 1 can green beans, drained
  • 3 tablespoons tomato paste
  • 1 can diced tomatoes (with juices)
  • 1 can black-eyed peas, drained
  • 1 can corn, drained
  • 4-6 cups beef broth
  • Italian seasoning to taste
  • Smoked paprika to taste
  • Chili powder to taste
  • Salt and pepper, to taste


Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add onion and celery, sauté until soft.
  2. Add minced garlic and sauté for another minute.
  3. Introduce ground beef and cook until browned.
  4. Incorporate all remaining ingredients and 4 cups of beef broth into the pot.
  5. Bring to a boil, then reduce heat to medium-low and let simmer for 14 to 16 minutes until potatoes are fork-tender.
  6. Adjust seasoning to taste and serve hot.

Notes

For added depth of flavor, let the soup simmer longer if possible. Experiment with your choice of vegetables and beans for a personalized touch.
