A hearty and comforting Cowboy Soup made with ground beef, vegetables, and flavorful spices, perfect for family gatherings.
Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 3 stalks celery, diced
- 4 cloves garlic, minced
- 2 lbs ground beef
- 1 lb Yukon gold potatoes, cut into 1-inch pieces
- 4 carrots, peeled and sliced
- 1 can green beans, drained
- 3 tablespoons tomato paste
- 1 can diced tomatoes (with juices)
- 1 can black-eyed peas, drained
- 1 can corn, drained
- 4-6 cups beef broth
- Italian seasoning to taste
- Smoked paprika to taste
- Chili powder to taste
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large Dutch oven over medium-high heat. Add onion and celery, sauté until soft.
- Add minced garlic and sauté for another minute.
- Introduce ground beef and cook until browned.
- Incorporate all remaining ingredients and 4 cups of beef broth into the pot.
- Bring to a boil, then reduce heat to medium-low and let simmer for 14 to 16 minutes until potatoes are fork-tender.
- Adjust seasoning to taste and serve hot.
Notes
For added depth of flavor, let the soup simmer longer if possible. Experiment with your choice of vegetables and beans for a personalized touch.
