Ingredients

  • – 2 tablespoons (30 ml) vegetable oil
  • – 1 small onion, finely diced
  • – 3 carrots, peeled and thinly sliced
  • – 2 celery sticks, thinly sliced
  • – 2 pounds (900 g) ground beef
  • – 3 cloves garlic, minced
  • – 2 teaspoons (10 ml) cumin
  • – 1 teaspoon (5 ml) chili powder
  • – 1 teaspoon (5 ml) oregano
  • – 1 1/2 teaspoons (8 ml) salt, or to taste
  • – 1/2 teaspoon (3 ml) ground black pepper, or to taste
  • – 14 ounces (400 g) canned diced tomatoes, with juice
  • – 14 ounces (400 g) canned diced tomatoes with green chilies
  • – 14 ounces (400 g) canned kidney beans, with juice
  • – 14 ounces (400 g) canned corn, drained and rinsed
  • – 14 ounces (400 g) canned green beans, drained and rinsed
  • – 3 Yukon gold potatoes, peeled and chopped
  • – 4 cups (960 ml) beef broth
  • – cilantro or parsley, for garnish


Instructions

  1. Pour two tablespoons of vegetable oil into a large pot and warm it on medium-high. Add the finely chopped onion, sliced carrots, and sliced celery, cooking them until they become soft.
  2. Introduce the ground beef to the pot and cook until it loses its pink hue.
  3. Add the minced garlic, cumin, chili powder, oregano, salt, and black pepper. Mix well and let it cook for an additional 1-2 minutes.
  4. Incorporate the canned diced tomatoes, tomatoes with green chilies, kidney beans, corn, green beans, and chopped potatoes into the pot, then pour in the beef broth to cover.
  5. Allow the mixture to reach a boil, then lower the heat to a simmer. Cover the pot and let it simmer for approximately 15 minutes or until the potatoes are tender.
  6. Top with freshly chopped cilantro or parsley before serving and enjoy your meal!
