Ingredients
- – 2 tablespoons (30 ml) vegetable oil
- – 1 small onion, finely diced
- – 3 carrots, peeled and thinly sliced
- – 2 celery sticks, thinly sliced
- – 2 pounds (900 g) ground beef
- – 3 cloves garlic, minced
- – 2 teaspoons (10 ml) cumin
- – 1 teaspoon (5 ml) chili powder
- – 1 teaspoon (5 ml) oregano
- – 1 1/2 teaspoons (8 ml) salt, or to taste
- – 1/2 teaspoon (3 ml) ground black pepper, or to taste
- – 14 ounces (400 g) canned diced tomatoes, with juice
- – 14 ounces (400 g) canned diced tomatoes with green chilies
- – 14 ounces (400 g) canned kidney beans, with juice
- – 14 ounces (400 g) canned corn, drained and rinsed
- – 14 ounces (400 g) canned green beans, drained and rinsed
- – 3 Yukon gold potatoes, peeled and chopped
- – 4 cups (960 ml) beef broth
- – cilantro or parsley, for garnish
Instructions
- Pour two tablespoons of vegetable oil into a large pot and warm it on medium-high. Add the finely chopped onion, sliced carrots, and sliced celery, cooking them until they become soft.
- Introduce the ground beef to the pot and cook until it loses its pink hue.
- Add the minced garlic, cumin, chili powder, oregano, salt, and black pepper. Mix well and let it cook for an additional 1-2 minutes.
- Incorporate the canned diced tomatoes, tomatoes with green chilies, kidney beans, corn, green beans, and chopped potatoes into the pot, then pour in the beef broth to cover.
- Allow the mixture to reach a boil, then lower the heat to a simmer. Cover the pot and let it simmer for approximately 15 minutes or until the potatoes are tender.
- Top with freshly chopped cilantro or parsley before serving and enjoy your meal!
