Ingredients
- 1 cup cottage cheese (full-fat or low-fat)
- 2 eggs
- 1 cup oat flour (or almond flour for a lower-carb option)
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon olive oil (optional, for extra softness)
- ½ teaspoon garlic powder or Italian seasoning (optional, for added flavor)
Instructions
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper and lightly grease it with oil or cooking spray.
- In a food processor or blender, blend the cottage cheese until smooth.
- In a mixing bowl, whisk together the eggs, blended cottage cheese, and olive oil if using.
- Add the oat flour, baking powder, salt, and any seasonings. Stir until well combined.
- Divide the dough into 2-3 portions.
- Roll each portion into a thin, oval shape on a floured surface.
- Transfer the rolled dough to the prepared baking sheet.
- Bake for 15-18 minutes, or until the edges turn golden brown.
- Let it cool for a few minutes before serving.
