Description

Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1/2 cup cooked bacon, chopped
  • Salt and pepper to taste
  • Optional: chopped vegetables (like spinach or bell peppers)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the cottage cheese and eggs until well combined.
  3. Stir in the chopped bacon and any optional vegetables.
  4. Season with salt and pepper to taste.
  5. Grease a muffin tin and pour the mixture evenly into the cups.
  6. Bake for 20-25 minutes or until the egg bites are set and slightly golden on top.
  7. Allow to cool slightly before removing from the muffin tin.

Notes
