Description

A moist, zesty lemon loaf that captures the essence of Starbucks’ beloved treat, perfect for coffee breaks and gatherings.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup plain yogurt
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for icing)
  • 2-3 tablespoons lemon juice (for icing)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs, yogurt, lemon juice, lemon zest, and vanilla extract; mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  7. Let the loaf cool before removing it from the pan.
  8. For the icing, mix powdered sugar with lemon juice until smooth and drizzle over the cooled loaf.
  9. Slice and serve with your favorite coffee!

Notes

Use fresh lemon juice and zest for the best flavor. Wrap the loaf tightly in plastic wrap once cooled to maintain moisture.
