Description

A delightful and refreshing lemon loaf that captures the essence of warmth and nostalgia.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon fresh lemon juice (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in lemon zest, lemon juice, and vanilla extract.
  6. Gradually mix in the dry ingredients until just combined.
  7. Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let it cool in the pan for 10 minutes, then transfer to a wire rack.
  9. For the glaze, mix powdered sugar and lemon juice until smooth and drizzle over the cooled loaf.

Notes

For a variation, add poppy seeds or fresh blueberries. Wrap the loaf tightly to maintain freshness.
